Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake in the preheated oven for 8-10 minutes until slightly golden. Remove and let cool.

Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese on medium speed until smooth and creamy. Add the dulce de leche and granulated sugar, mixing until thoroughly combined. Add the eggs, one at a time, blending after each addition. Stir in the vanilla extract and flour (if using) until just combined. Be careful not to overmix.

Bake the Cheesecake Bars: Pour the cheesecake filling over the cooled crust, smoothing it out evenly with a spatula. Bake for 30-35 minutes until the center is set but still slightly jiggly. Remove from the oven and let cool at room temperature for about an hour. Then, refrigerate for at least 4 hours or until fully chilled and firm.

Prepare the Topping: Once the cheesecake bars are cool, spread a layer of whipped cream over the top. Drizzle additional dulce de leche on top and sprinkle with sea salt if desired for an added flavor contrast.

Cut and Serve: Lift the cheesecake bars out of the pan using the parchment paper overhang. Cut into squares and serve chilled. Enjoy your creamy, decadent dessert!
