Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup shredded cabbage (green or purple)

1 avocado, sliced

1 cup diced tomatoes

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

8 small soft corn or flour tortillas

Salt and pepper to taste

Optional: Hot sauce for serving

Instructions

Marinate the Shrimp: In a bowl, combine the shrimp, Cajun seasoning, olive oil, salt, and pepper. Toss well to coat the shrimp evenly with the seasoning. Let it marinate for about 15-20 minutes for the flavors to meld.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.

Prepare the Tortillas: In another skillet, warm the tortillas over medium heat for about 30 seconds on each side, just until they are pliable and slightly toasted.

Assemble the Tacos: To each tortilla, add a layer of shredded cabbage, followed by the cooked Cajun shrimp, sliced avocado, and diced tomatoes. Sprinkle chopped cilantro on top.

Serve: Squeeze fresh lime juice over the tacos for an extra burst of flavor. Serve immediately with hot sauce on the side if desired.
