Easy Chicken Piccata Pasta

Ingredients
  

8 oz fettuccine or spaghetti

1 lb chicken breasts, boneless and skinless

Salt and pepper, to taste

3 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup capers, drained

1/4 cup fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

Freshly grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts on both sides with salt and pepper.

      Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to rest.

        Make the Piccata Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, bringing it to a simmer. Stir in the drained capers and red pepper flakes (if using). Let it simmer for about 3-4 minutes until slightly reduced.

          Toss Everything Together: Slice the cooked chicken into strips and return it to the skillet. Add the cooked pasta to the sauce along with some of the reserved pasta water to help combine. Toss everything together gently to coat the pasta and chicken in the sauce.

            Finish and Serve: Stir in the chopped fresh parsley. Taste and adjust seasoning with salt and pepper if needed. Serve with freshly grated Parmesan cheese on top and a garnish of additional parsley, if desired.
