Ingredients

4 cups fresh broccoli slaw (store-bought or homemade)

1 cup shredded carrots

½ cup red cabbage, finely shredded

½ cup mayonnaise (or Greek yogurt for a lighter option)

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper, to taste

¼ cup sunflower seeds (optional for crunch)

¼ cup raisins or dried cranberries (optional for sweetness)

Instructions

Prepare the Vegetables: If you're making your own broccoli slaw, thinly slice the broccoli stems and break the florets into small pieces. Combine broccoli slaw with shredded carrots and red cabbage in a large mixing bowl.

Make the Dressing: In a separate small bowl, whisk together the mayonnaise (or yogurt), apple cider vinegar, honey (or maple syrup), and Dijon mustard until smooth and creamy.

Combine: Pour the dressing over the vegetable mixture and toss well to ensure all the veggies are coated evenly.

Season: Add salt and pepper to taste. If you'd like some extra texture and sweetness, stir in the sunflower seeds and raisins (or cranberries).

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld. This slaw can be made up to a day in advance!

Serve: Give the slaw a good toss before serving, and enjoy it as a side dish or a light lunch!
