Easy Grilled Thai Chicken Skewers

1 lb (450g) boneless chicken thighs, cut into 1-inch cubes

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons lime juice (freshly squeezed)

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoon ground ginger

1 teaspoon red pepper flakes (adjust for spice level)

1 tablespoon vegetable oil

8 bamboo skewers (soaked in water for 30 minutes)

Fresh cilantro and lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine soy sauce, fish sauce, lime juice, brown sugar, garlic powder, ground ginger, and red pepper flakes. Add the chicken cubes and stir well to coat. Cover and let marinate for at least 30 minutes in the refrigerator (or up to 4 hours for deeper flavor).

    Prepare the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If you're using a charcoal grill, ensure the coals are evenly lit and covered with ash.

      Skewer the Chicken: Thread the marinated chicken onto the soaked bamboo skewers, leaving a little space between each piece to ensure even cooking.

        Grill the Skewers: Lightly brush the grill grates with vegetable oil to prevent sticking. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
