Ingredients

1 lb ground beef

2 packs of instant ramen noodles (discard seasoning packets)

4 cups beef broth

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

1 cup sliced green onions (divided)

1 cup baby spinach

2 large eggs

Salt and pepper to taste

Optional toppings: sesame seeds, chili flakes, seaweed strips

Instructions

Cook the Ramen Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3–4 minutes. Once cooked, drain and set aside.

Brown the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until it’s browned, about 5–7 minutes. Wear a splatter guard if needed. Use a wooden spoon to break it into small pieces as it cooks.

Add Flavors: Once the beef is browned, drain any excess fat. Stir in the garlic powder, ginger powder, soy sauce, oyster sauce, and sesame oil. Mix well to ensure the beef is fully coated in the sauces. Season with salt and pepper to taste. Cook for an additional 2 minutes to enhance the flavors.

Combine with Broth: Pour in the beef broth, and bring the mixture to a gentle simmer. Let it cook for about 5 minutes, allowing the flavors to meld together.

Add Greens and Noodles: Add the sliced green onions (reserve some for garnish) and baby spinach to the skillet. The spinach will wilt quickly. Then, gently fold in the cooked ramen noodles, allowing them to soak up the broth and flavors for about 2 minutes.

Poach the Eggs: In a separate small pot, bring water to a simmer. Gently crack each egg into the water, one at a time, and poach for about 3 minutes for a runny yolk. Adjust cooking time if you prefer firmer yolks. Remove with a slotted spoon and set aside.

Serve: Divide the ramen beef mixture into bowls. Top each bowl with a poached egg, a sprinkle of reserved green onions, and any optional toppings like sesame seeds, chili flakes, and seaweed strips.

Enjoy: Serve hot and enjoy your delicious and hearty ground beef ramen bowls!
