Ingredients

1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon cayenne pepper (optional, for extra kick)

1/2 cup hot honey (store-bought or homemade)

8 refrigerated biscuits (homestyle or flaky)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs with buttermilk, salt, black pepper, garlic powder, and paprika. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Breading: In a separate large bowl, mix flour, baking powder, baking soda, cayenne pepper (if using), and a pinch of salt.

Preheat the Oven: Preheat your oven to 425°F (220°C) for the biscuits, and prepare a baking sheet lined with parchment paper.

Coat the Chicken: Remove the marinated chicken from the refrigerator. One piece at a time, take the chicken out of the buttermilk, letting excess drip off and then coat it in the flour mixture until fully covered. Shake off any excess.

Fry the Chicken: In a skillet, heat vegetable oil over medium heat until hot (around 350°F/175°C). Add the coated chicken pieces and fry for about 5-7 minutes per side or until the chicken is golden brown and fully cooked (internal temperature should reach 165°F/74°C). Transfer the fried chicken to a paper towel-lined plate to drain excess oil.

Bake the Biscuits: While the chicken is frying, place the refrigerated biscuits on the prepared baking sheet. Bake according to package instructions or until they are golden and fluffy, usually about 10-12 minutes.

Assemble the Biscuits: Once the biscuits are done, slice them in half. Place a piece of fried chicken on the bottom half of each biscuit, drizzle generously with hot honey, and then top with the other half of the biscuit.

Garnish and Serve: If desired, sprinkle with fresh chopped parsley for a pop of color and flavor. Serve the hot honey chicken biscuits warm, and enjoy your burst of sweet and spicy goodness!
