8 ounces of rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

1/2 cup black olives, pitted and sliced

1/2 cup salami, diced into bite-sized pieces

1/2 cup roasted red peppers, sliced

1 cup baby spinach

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool it down. Set aside.

    Prepare the Veggies: In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, sliced black olives, diced salami, sliced roasted red peppers, and baby spinach.

      Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well blended.

        Combine Ingredients: Add the cooled pasta to the mixing bowl with the vegetables and meats. Pour the dressing over the mixture and gently toss to combine everything evenly.
