1 tablespoon olive oil

1 medium yellow onion, diced

2 medium carrots, diced

2 ribs celery, diced

3 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and black pepper, to taste

4 cups chicken broth

2 cups cooked rotisserie chicken, shredded

1 (16 oz) package potato gnocchi

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender and the onions become translucent.

    Add Aromatics: Stir in the minced garlic, dried thyme, and dried basil. Cook for an additional 1-2 minutes until fragrant.

      Broth & Chicken: Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the shredded rotisserie chicken and season with salt and pepper to taste.

        Cook Gnocchi: Add the potato gnocchi to the pot and cook according to package instructions (usually about 3-4 minutes) until they float to the top.

          Finish the Soup: Lower the heat and stir in the fresh spinach, heavy cream, and grated Parmesan cheese. Allow the soup to simmer for about 5 minutes to heat through and thicken slightly. Adjust seasoning if needed.

            Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy warm!
