1 ½ cups warm milk (about 110°F)

2 tbsp granulated sugar

2 ¼ tsp active dry yeast (1 packet)

4 cups all-purpose flour

½ cup unsalted butter, melted

1 tsp salt

1/2 cup baking soda (for water bath)

1 large egg (for egg wash)

Coarse sea salt (for sprinkling)

Instructions
 

Activate Yeast: In a large mixing bowl, combine warm milk and sugar. Stir in the yeast and let it sit for about 5-10 minutes until frothy.

    Mix Dough: Once the yeast is activated, add melted butter and salt to the mixture. Gradually add flour, 1 cup at a time, until a soft dough forms.

      Knead Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Shape Rolls: After rising, punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball and place them tightly together in a greased 9x13-inch baking dish.

            Second Rise: Cover the rolls with a cloth and let them rise again for about 30 minutes.

              Prepare Water Bath: In a large pot, bring 8 cups of water to a boil. Stir in the baking soda carefully (it can bubble up).

                Boil Rolls: Preheat your oven to 375°F (190°C). Once the water is at a rolling boil, reduce the heat to medium. Using a slotted spoon, gently lower a few rolls into the water. Boil for about 30 seconds on each side before removing and putting back into the baking dish.

                  Egg Wash and Season: Beat the egg in a bowl and brush it over the tops of the rolls. Sprinkle with coarse sea salt.

                    Bake: Bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.
