1 ½ cups of crushed graham crackers

½ cup unsalted butter, melted

1 cup strawberry ice cream, softened

1 cup vanilla ice cream, softened

2 cups fresh strawberries, hulled and sliced

¼ cup powdered sugar

1 teaspoon vanilla extract

Whipped cream (for topping)

Fresh mint leaves (for garnish)

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Layer the Ice Cream: Start by spreading the softened strawberry ice cream over the graham cracker crust, smoothing it out evenly. Follow with a layer of sliced fresh strawberries on top of the strawberry ice cream.

      Add Vanilla Ice Cream: Gently spread the softened vanilla ice cream over the strawberries, smoothing it to create an even layer.

        Create the Topping: In a medium bowl, whip 1 cup of heavy cream with the powdered sugar and vanilla extract until peaks form. You can adjust the sweetness to your taste.

          Top the Cake: Spoon the whipped cream mixture on top of the vanilla layer, spreading it to fully cover the ice cream. Garnish the top with additional sliced strawberries and mint leaves.

            Freeze: Cover the cake with plastic wrap or foil and place it in the freezer for at least 4 hours, or until solid.

              Serve: To serve, remove the cake from the springform pan. Let it sit at room temperature for about 10-15 minutes before slicing. Serve immediately and enjoy this refreshing dessert!
