Easy Vegetable Beef Soup

1 pound ground beef (or stew meat)

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (any color), diced

1 medium zucchini, diced

1 can (14.5 oz) diced tomatoes (with juice)

4 cups beef broth

1 cup green beans, trimmed and cut into 1-inch pieces

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 cups fresh spinach (or kale, optional)

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. If using stew meat, brown on all sides for about 8-10 minutes.

    Sauté Vegetables: Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for about 5 minutes or until the vegetables begin to soften.

      Add Remaining Ingredients: Stir in the bell pepper, zucchini, canned tomatoes (with juice), and beef broth. Add the green beans, oregano, thyme, and Worcestershire sauce. Season with salt and pepper to taste.

        Simmer: Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes. This allows the flavors to meld beautifully.

          Add Greens: If using spinach or kale, add it to the pot in the last 5 minutes of cooking. Stir until wilted.

            Serve: Taste and adjust seasoning if necessary. Ladle the soup into bowls and garnish with fresh parsley. Enjoy hot with crusty bread or crackers!
