Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup water (or non-dairy milk for a richer flavor)

1/3 cup Sriracha sauce (adjust based on spice preference)

2 tablespoons maple syrup or honey

1 tablespoon soy sauce (or tamari for gluten-free)

2 tablespoons vegetable oil (for baking)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Batter: In a mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually whisk in the water (or non-dairy milk) until you achieve a smooth batter with no lumps.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Place the coated florets on the lined baking sheet, ensuring they are spaced apart for even cooking.

Bake the Cauliflower: Bake the cauliflower bites in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy, turning them halfway through for even cooking.

Prepare the Sriracha Sauce: While the cauliflower is baking, prepare the fiery Sriracha sauce. In a small bowl, mix together Sriracha, maple syrup (or honey), soy sauce, and vegetable oil until well combined.

Toss in Sauce: Once the cauliflower is crispy, remove it from the oven and drizzle the Sriracha sauce over the bites. Gently toss to coat all florets evenly with the sauce.

Final Bake: Return the coated cauliflower to the oven and bake for an additional 5-7 minutes until the edges are crispy and the sauce is bubbling.

Serve: Remove the bites from the oven and let them cool for a minute. Transfer to a serving platter, garnish with freshly chopped cilantro, and serve hot with your favorite dip (like ranch or blue cheese dressing).
