Ingredients

3 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups all-purpose flour

3/4 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with non-stick spray.

Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted coconut oil until well combined. Then add the brown sugar, the beaten egg, and vanilla extract; mix until everything is evenly incorporated.

Add Dry Ingredients: In another bowl, whisk together the baking soda, salt, ground cinnamon, and all-purpose flour. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips (and nuts, if using) until evenly distributed throughout the batter.

Fill Muffin Tin: Use a spoon or ice cream scoop to fill each muffin liner about 2/3 full with the batter. This will give your muffins room to rise without overflowing.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool and Enjoy: Remove the muffins from the oven and let them cool in the muffin tin for 5 minutes. Then, transfer them to a cooling rack to cool completely. Enjoy your fluffy banana chocolate chip muffins warm or at room temperature!
