Ingredients

1 cup rolled oats

1 medium ripe banana, mashed

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

Cooking oil or butter for the pan

Optional toppings: fresh banana slices, maple syrup, nuts, or yogurt

Instructions

Blend the Oats: In a blender or food processor, blend the rolled oats until they reach a fine flour-like consistency. This will be your oat flour.

Mix Wet Ingredients: In a mixing bowl, combine the mashed banana, milk, egg, maple syrup, and vanilla extract. Whisk until smooth.

Combine Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, cinnamon, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until combined. Be careful not to overmix; a few lumps are fine.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a small amount of oil or butter to coat the surface.

Cook the Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles start to form on the surface. Flip and cook for another 2-3 minutes until golden brown.

Serve and Enjoy: Repeat with the remaining batter, adding more oil or butter to the pan as needed. Serve warm with your favorite toppings, such as sliced bananas, a drizzle of maple syrup, nuts, or yogurt.
