12 oz (340g) pasta (cavatappi or fusilli recommended)

1 lb (450g) ground beef

2 large yellow onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded Gruyère cheese, divided

1 cup shredded mozzarella cheese, divided

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 tsp thyme (dried or fresh)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

      Sauté Onions: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized (about 20-25 minutes). Add a splash of water if they start to stick to the bottom of the pan.

        Cook the Beef: Once the onions are caramelized, push them to one side of the skillet. In the same skillet, add the ground beef. Cook for about 5-7 minutes until browned, breaking it apart with a spatula. Add minced garlic, Worcestershire sauce, thyme, salt, and pepper. Stir to combine and let it cook for another 3-4 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, beef mixture, caramelized onions, beef broth, sour cream, and cream cheese. Mix well until everything is evenly coated.

            Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly. Top with half of the Gruyère cheese and mozzarella cheese. Sprinkle the remaining cheese over the top.

              Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley if desired and serve warm.
