French Onion Chicken Skillet

4 boneless, skinless chicken thighs

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon sugar

4 cloves garlic, minced

1/2 cup beef broth

1/4 cup white wine (optional)

1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

Salt and pepper to taste

1 cup Gruyère cheese, grated

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear them for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Caramelize the Onions: In the same skillet, add the butter and sliced onions. Sprinkle with sugar to help caramelize. Cook the onions over medium heat, stirring occasionally, for about 15-20 minutes until they are golden brown and soft.

        Add Garlic and Thyme: Once the onions are caramelized, add the minced garlic and fresh thyme. Cook for another 1-2 minutes until fragrant.

          Deglaze the Pan: Pour in the beef broth and wine (if using), scraping the bottom of the skillet to deglaze and release any browned bits. Bring the mixture to a simmer.

            Combine Chicken and Sauce: Return the seared chicken back to the skillet, nestling it into the onion mixture. Spoon some of the onions over the chicken.

              Melt the Cheese: Sprinkle the grated Gruyère cheese over the top of the chicken. Cover the skillet and allow it to cook on low heat for about 5 minutes or until the cheese has melted and is bubbly.

                Serve: Remove from heat, garnish with chopped parsley, and serve hot with crusty bread or over mashed potatoes to soak up the delicious sauce.
