2 cups fresh cherries, pitted and halved

1 cup whole milk

3 large eggs

1 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

1 cup all-purpose flour

1/4 teaspoon salt

2 tablespoons unsalted butter, melted

Powdered sugar, for dusting (optional)

Fresh mint leaves, for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch (23 cm) round pie dish or a similar size baking dish with butter.

    Prepare the Cherries: In a medium bowl, combine the pitted and halved cherries with a tablespoon of granulated sugar. Gently toss and set aside to macerate while you prepare the batter.

      Make the Batter: In a large mixing bowl, whisk together the eggs and remaining sugar until light and frothy. Add the whole milk, vanilla extract, almond extract (if using), melted butter, and salt. Whisk until well combined.

        Incorporate the Flour: Sift the flour into the wet mixture and stir gently until just combined. Be careful not to overmix. You want the batter to be smooth with no lumps.

          Combine and Layer: Pour a thin layer of the batter (about 1/3) into the prepared dish, then layer the macerated cherries evenly over the batter. Finally, pour the remaining batter over the cherries, ensuring they are mostly covered.

            Bake the Clafoutis: Place the dish in the preheated oven and bake for 35-45 minutes, or until the clafoutis is puffed and golden brown around the edges. A toothpick inserted in the center should come out mostly clean, with a few moist crumbs.
