2 large zucchini (for zoodles)

2 cups cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 red onion, thinly sliced

1/4 cup fresh basil leaves, chopped

1/4 cup crumbled feta cheese

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

Salt and pepper, to taste

1/2 tsp garlic powder (optional)

Instructions
 

Prepare the Zoodles: Using a spiralizer or a julienne peeler, create zoodles (zucchini noodles) from the zucchini. Pat them dry with a paper towel to remove excess moisture.

    Combine Vegetables: In a large bowl, add the zoodles, halved cherry tomatoes, diced cucumber, and sliced red onion. Toss gently to combine the ingredients.

      Add Basil and Feta: Fold in the chopped basil leaves and crumbled feta cheese, ensuring even distribution throughout the salad.

        Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder (if using), and a pinch of salt and pepper. Taste and adjust seasoning as desired.
