Ingredients

2 cups plain Greek yogurt (full-fat or low-fat)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup mixed frozen berries (strawberries, blueberries, raspberries, or blackberries)

1/4 cup granola (optional, for crunch)

2 tablespoons shredded coconut (optional, for garnish)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of sea salt. Mix well until smooth and creamy.

Line the Baking Sheet: Line a baking sheet with parchment paper. This will prevent the yogurt from sticking and make it easier to remove later.

Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it out evenly into a rectangle or square, about 1/2 inch thick.

Add the Berries: Scatter the mixed frozen berries evenly over the yogurt layer, pushing them in slightly to create an even distribution.

Sprinkle Granola and Coconut: If you're using granola, sprinkle it over the top of the berries. Then, add the shredded coconut for an extra touch of flavor and texture.

Freeze: Carefully place the baking sheet in the freezer and let it freeze for at least 4 hours, or until the yogurt is completely firm.

Cut and Serve: Once frozen, remove the yogurt bark from the freezer. Peel off the parchment paper, and break or cut the bark into pieces of your desired size.

Enjoy: Serve immediately or store the pieces in an airtight container in the freezer for up to 1 month. Enjoy your refreshing and healthy snack on a hot day!
