1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 cup freshly squeezed lemon juice (about 4-5 lemons)

1 tablespoon lemon zest

1 can (14 oz) sweetened condensed milk

1 container (8 oz) whipped topping, thawed

A pinch of salt

Optional Topping:

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well coated and the mixture resembles damp sand.

      - Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the back of a measuring cup or your fingers to create an even layer.

        - Bake the crust in a preheated oven at 350°F (175°C) for 8-10 minutes or until lightly golden. Remove and let it cool completely.

          Make the Filling:

            - In a large mixing bowl, whisk together the fresh lemon juice, lemon zest, sweetened condensed milk, and a pinch of salt until well combined and smooth.

              - Gently fold in the thawed whipped topping until there are no streaks visible. Take care not to deflate the whipped topping.

                Assemble the Pie:

                  - Pour the lemon filling into the cooled crust, smoothing the top with a spatula.

                    - Cover with plastic wrap and freeze the pie for at least 4 hours or until completely firm.

                      Serve:

                        - Once set, remove the pie from the freezer and let it sit at room temperature for about 10 minutes before slicing. This makes for easier cutting.
