Ingredients

2 cups fresh or frozen peaches, diced

1 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: granola or crushed nuts for topping

Instructions

Prepare the Peaches: If you're using fresh peaches, wash, peel, and dice them into small chunks. If using frozen, allow them to slightly thaw for easier blending.

Blend the Mixture: In a blender or food processor, combine the diced peaches, Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed.

Taste Test: After blending, taste the mixture and adjust the sweetness, adding more honey or maple syrup if desired.

Pour and Fill: Spoon the peach yogurt mixture into silicone molds or mini muffin tins. If you desire, sprinkle granola or crushed nuts on top for added crunch and texture.

Freeze: Place the molds in the freezer for at least 2-4 hours until completely frozen.

Serve: Once frozen solid, pop the peach yogurt bites out of the molds. Serve immediately or store them in an airtight container in the freezer for a refreshing snack later.
