Ingredients

2 cups plain Greek yogurt (full-fat or low-fat)

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, chopped, and washed)

½ cup shredded coconut (unsweetened or sweetened, based on your preference)

¼ cup chopped nuts (almonds, pecans, or walnuts)

A pinch of sea salt

Optional: 2 tablespoons dark chocolate chips or drizzle

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of sea salt. Stir well until thoroughly combined and smooth.

Line the Tray: Line a baking sheet or a shallow tray (approximately 9x13 inches) with parchment paper. This will prevent the yogurt bark from sticking and make it easy to lift out when frozen.

Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet. Using a spatula, spread it evenly to create a thickness of about ½ inch.

Add Toppings: Evenly sprinkle the mixed berries across the yogurt. Then, add the shredded coconut and chopped nuts as well. If you're using chocolate chips, sprinkle them on top too.

Freeze: Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until the yogurt is completely solid.

Cut into Pieces: Once frozen, remove the yogurt bark from the freezer. Lift the edges of the parchment paper and transfer the bark to a cutting board. Using a sharp knife or a pizza cutter, cut the frozen yogurt into bite-sized pieces or irregular shapes, according to your preference.

Serve or Store: Enjoy immediately or store the bark pieces in an airtight container in the freezer. This delicious treat can last up to 2 weeks!
