Ingredients

2 cups Greek yogurt (plain or flavored)

1 cup granola (store-bought or homemade)

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until smooth and well blended.

Line Muffin Tin: Line a muffin tin with paper liners or silicone cups to make removing the granola cups easier after freezing.

Layer Granola and Yogurt: Add a spoonful of granola to the bottom of each muffin cup, pressing down slightly to create a firm base. Follow with a layer of the yogurt mixture, filling about halfway up the cup.

Add Berries: Drop a few mixed berries into each cup, pressing them down slightly into the yogurt. You can also sprinkle some mini chocolate chips on top if desired.

Top with More Yogurt: Finish with another layer of yogurt, smoothing the top with a spatula or the back of a spoon. You can also add a final layer of granola on top for added crunch.

Freeze the Cups: Once assembled, place the muffin tin in the freezer. Freeze for at least 4 hours or until the cups are fully set.

Remove and Serve: When ready to serve, remove the muffin tin from the freezer. Let it sit for a couple of minutes to soften slightly for easier removal. Gently pull each cup out of the muffin tin.

Garnish: If desired, garnish with a fresh mint leaf on top for a pop of color and flavor.

Enjoy: Serve immediately or store leftovers in an airtight container in the freezer for up to one week. Enjoy your refreshing and crunchy frozen yogurt granola cups!
