4 boneless, skinless chicken breasts

8 oz (225g) cremini or button mushrooms, sliced

4 cloves of garlic, minced

1/2 cup (115g) unsalted butter

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

      Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and cook for 4-5 minutes until they are browned and tender. Add a pinch of salt to help draw out moisture.

        Add Garlic and Herbs: Lower the heat to medium and add the minced garlic, dried thyme, and rosemary to the mushrooms. Sauté for an additional 1-2 minutes until the garlic becomes fragrant but not burnt.

          Make Garlic Butter Sauce: Reduce the heat to low and add the butter to the skillet, stirring until melted and combined with the mushrooms and garlic.

            Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the garlic butter mushroom mixture over the top. Cook for another 2-3 minutes to heat the chicken through and allow the flavors to meld.
