1 pound medium-sized carrots, peeled and cut into sticks

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 teaspoon honey (optional, for sweetness)

Salt and black pepper, to taste

1 tablespoon olive oil

Zest of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Carrots: In a large bowl, toss the carrot sticks with the olive oil, ensuring they're evenly coated. Season with salt and black pepper to taste.

      Make Garlic Butter: In a separate bowl, mix the melted butter, minced garlic, honey (if using), lemon zest, and chopped parsley. Stir well.

        Combine: Pour the garlic butter mixture over the carrots, mixing until they’re thoroughly coated.

          Roast: Spread the carrots in a single layer on a baking sheet lined with parchment paper. Make sure they're not overcrowded to allow for even roasting. Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized, stirring halfway through the cooking time.
