Ingredients

4 salmon fillets (about 6 oz each)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon dried parsley (or 2 tablespoons fresh parsley, chopped)

1 teaspoon dried oregano

Salt and black pepper to taste

2 cups asparagus, trimmed (or your favorite vegetables)

Lemon slices for garnish

Fresh parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Foil Packs: Cut four large pieces of aluminum foil, about 12x18 inches each. Lay each piece flat on your work surface.

Make the Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, dried parsley, dried oregano, and a pinch of salt and pepper. Mix well until combined.

Assemble the Packs: Place one salmon fillet in the center of each piece of foil. Drizzle each fillet generously with the garlic butter mixture, ensuring you cover the top and sides well.

Add Vegetables: Divide the asparagus (or your choice of vegetables) evenly among the packs, placing them next to the salmon. Drizzle any remaining garlic butter over the vegetables and season with salt and pepper.

Seal the Packs: Fold the sides of the foil over the salmon and vegetables, and then fold the ends to create a sealed packet. Make sure it's tightly closed to prevent any juices from leaking out.

Cook in the Oven: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully open each foil pack (watch out for hot steam). Serve the salmon and vegetables directly from the foil or on a plate, garnished with lemon slices and fresh parsley.
