1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

1 tablespoon lemon juice

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

8 slices of crusty bread (such as ciabatta or sourdough)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Optional: lemon wedges, for serving

Instructions
 

Prepare the Shrimp: In a medium bowl, season the shrimp with salt, black pepper, and lemon juice. Set aside.

    Make the Garlic Butter: In a skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, and sauté until the garlic is fragrant and lightly golden (about 1-2 minutes). Be careful not to burn the garlic.

      Cook the Shrimp: Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes on each side. Remove from heat and stir in the chopped parsley. Set aside to cool slightly.

        Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking sheet. Brush one side of each slice generously with the garlic butter mixture from the skillet. Bake for 5-7 minutes, or until the bread is golden and crispy.

          Assemble the Melts: Top each toasted slice with a generous portion of the garlic shrimp mixture. Sprinkle shredded mozzarella and grated Parmesan on top of each shrimp toast.

            Broil the Melts: Switch your oven to broil. Place the toast melts under the broiler for 2-3 minutes, or until the cheese is bubbling and golden brown.

              Serve: Remove the toast melts from the oven and let them cool slightly. Serve warm with additional lemon wedges on the side for a zesty finish.
