Ingredients

4 bone-in, skin-on chicken thighs

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, thyme, basil blend)

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup unsalted butter, melted

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare Baking Sheet: Line a baking sheet with parchment paper for easy clean-up and to prevent sticking.

Make the Crust Mixture: In a medium bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, dried Italian herbs, paprika, salt, and pepper. Stir until evenly mixed.

Prepare Chicken Thighs: Pat the chicken thighs dry with paper towels to ensure a crispy crust. Then, place them skin-side up on the prepared baking sheet.

Coat the Chicken: Brush each chicken thigh generously with melted butter, ensuring the skin is well-coated. Then, press the breadcrumb mixture onto the skin side of each thigh firmly, so it sticks well.

Bake: Place the baking sheet in your preheated oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden brown and crispy.

Rest and Garnish: Once baked, remove the chicken from the oven and let it rest for about 5 minutes. This helps retain the juiciness. Sprinkle with chopped fresh parsley for added flavor and color.

Serve: Serve the garlic Parmesan crusted chicken thighs with lemon wedges on the side for squeezing over the chicken, enhancing the flavors further.
