2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1 3/4 cups buttermilk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

8 slices bacon, cooked crispy

4 large eggs (for frying)

4 slices cheddar cheese

Maple syrup, for drizzling

Fresh chives, for garnish (optional)

Instructions
 

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions to ensure a perfect crisp when you cook the waffles.

    Make the Waffle Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined, ensuring not to overmix; a few lumps are fine.

      Cook the Waffles: Lightly grease the preheated waffle iron with cooking spray or butter. Pour 1 cup of waffle batter into the center of the waffle iron and close the lid. Cook for about 4–5 minutes or until the waffles are golden brown and crispy. Repeat with the remaining batter.

        Prepare the Bacon and Eggs: While the waffles are cooking, prepare the bacon and fried eggs. Use the already cooked crispy bacon strips and in a non-stick pan, crack the eggs and fry them to your liking (sunny-side up or over-easy works great).
