1 cup polenta (cornmeal)

4 cups water or vegetable broth

1 teaspoon salt

2 tablespoons olive oil (plus more for frying)

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional, for extra flavor)

Fresh herbs for garnish (such as parsley or basil)

Instructions
 

Prepare the Polenta:

    - In a medium-sized saucepan, bring the water or vegetable broth to a boil. Add in the salt.

      - Gradually whisk in the polenta, stirring continuously to avoid lumps. Reduce the heat to low and cook for about 15-20 minutes, or until the polenta thickens and pulls away from the sides of the pan.

        Flavor the Polenta:

          - Once cooked, stir in the olive oil, garlic powder, smoked paprika, black pepper, and grated Parmesan cheese (if using). Mix well to incorporate all the ingredients.

            Spread and Chill:

              - Pour the polenta into a greased baking dish or tray, smoothing the top with a spatula to create an even layer (about 1/2 inch thick).

                - Allow the polenta to cool at room temperature for about 10 minutes, then cover and refrigerate for at least 1-2 hours, or until firm.

                  Cut into Fries:

                    - Once chilled, remove the polenta from the refrigerator. Using a sharp knife, cut the polenta into fries or wedges of your desired thickness.

                      Fry the Polenta:

                        - In a large skillet, heat enough olive oil to cover the bottom over medium heat.

                          - Add the polenta fries in a single layer, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden and crispy.

                            Drain and Season:

                              - Once fried, place the polenta fries on a paper towel-lined plate to drain any excess oil. Season with additional salt or spices to taste.
