2 medium sweet potatoes

2 tablespoons sesame oil

1 tablespoon light soy sauce

1 tablespoon honey or agave syrup (for a vegan option)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon sea salt

2 tablespoons sesame seeds (white or black, or a mix)

Fresh herbs for garnish (optional, e.g., cilantro or parsley)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Using a mandoline slicer or sharp knife, slice the sweet potatoes thinly (about 1/8 inch thick) for even cooking.

      Create the Marinade: In a large bowl, combine the sesame oil, soy sauce, honey or agave syrup, garlic powder, smoked paprika, and sea salt. Mix well until all ingredients are fully combined.

        Marinate the Chips: Add the sweet potato slices to the bowl and gently toss them in the marinade until they are evenly coated. Allow them to marinate for about 15-20 minutes to absorb the flavors.

          Arrange for Baking: Lay the marinated sweet potato slices in a single layer on the prepared baking sheet. Ensure that they do not overlap to achieve that crispy texture. Sprinkle sesame seeds evenly over the top.
