1 tsp ground cumin

1 tsp smoked paprika

Juice of 1 lemon

Salt & pepper to taste

_For the Tzatziki Sauce:_

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Juice of 1/2 lemon

Salt to taste

_For the Bowls:_

2 cups cooked brown rice or quinoa

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup crumbled feta cheese

Fresh parsley or mint, for garnish

Marinate the Chicken: In a large bowl, combine minced garlic, olive oil, oregano, cumin, smoked paprika, lemon juice, salt, and pepper. Add the chicken thighs, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 1 hour (up to 8 hours for best flavor).

    Make the Tzatziki Sauce: In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Stir until well combined and then refrigerate until ready to use.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until fully cooked and juices run clear (internal temperature should reach 165°F). Let it rest for a few minutes before slicing.
