Grilled BBQ Chicken Quesadillas

Ingredients
  

2 boneless, skinless chicken breasts

1 cup BBQ sauce (your choice; smoky or sweet)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

4 large flour tortillas

2 cups shredded cheese (cheddar or Monterey Jack)

1 cup corn (fresh, frozen, or canned; drained)

1/2 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Cooking spray or extra olive oil for grilling

Instructions
 

Prep the Chicken:

    - In a bowl, combine 1 cup of BBQ sauce, smoked paprika, garlic powder, and black pepper. Mix well.

      - Place the chicken breasts in a resealable bag and pour half of the BBQ marinade over them. Seal the bag and marinate for at least 30 minutes (up to 4 hours in the refrigerator for more flavor).

        Grill the Chicken:

          - Preheat your grill or grill pan over medium-high heat. Lightly coat with cooking spray or olive oil.

            - Remove the chicken from the marinade and grill for about 6-7 minutes per side, until the internal temperature reaches 165°F (75°C). Brush with additional BBQ sauce halfway through grilling.

              - Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

                Prepare Quesadillas:

                  - In a large skillet over medium heat, add a drizzle of olive oil. Place one tortilla in the skillet.

                    - On one half of the tortilla, add 1/2 cup of shredded cheese, a portion of sliced grilled chicken, corn, red onion, and cilantro. Top with another 1/2 cup of cheese.

                      - Fold the tortilla in half and cook for 3-4 minutes, until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.

                        Serve:

                          - Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.

                            - Serve warm with extra BBQ sauce, sour cream, or guacamole on the side.
