Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon kosher salt

½ teaspoon black pepper

Zest and juice of 1 orange

Zest and juice of 1 lemon

1 tablespoon honey

Fresh parsley, chopped for garnish (optional)

Instructions

Prepare the Marinade: In a medium-sized bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, salt, pepper, orange zest and juice, lemon zest and juice, and honey until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish and refrigerate. Allow the chicken to marinate for at least 1 hour, or up to overnight for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

Grill the Chicken: Remove the chicken thighs from the marinade, shaking off any excess. Place the thighs skin-side down on the grill. Grill for about 5-7 minutes until the skin is crispy and golden.

Flip and Finish Cooking: Carefully flip the chicken thighs over and reduce the heat to medium. Continue grilling for another 10-15 minutes or until the internal temperature reaches 165°F (74°C) and the juices run clear.

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5-10 minutes. This allows the juices to redistribute, keeping the chicken juicy.

Serve: Garnish with freshly chopped parsley if desired, and serve with your favorite sides, such as grilled vegetables, rice, or a fresh salad.
