Grilled Garlic Butter Steak Bites

1 lb (450 g) sirloin or ribeye steak, cut into 1-inch cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus extra for garnish)

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Juice of 1 lemon (optional, for serving)

Skewers (if using wooden skewers, soak in water for 30 minutes prior)

Instructions
 

Prepare the Marinade:

    In a medium bowl, melt 2 tablespoons of butter. Stir in minced garlic, chopped parsley, oregano, smoked paprika, salt, and pepper. Combine well to form a garlic butter marinade.

      Marinate the Steak:

        Add the cubed steak into the bowl and mix until all pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour, allowing the flavors to meld.

          Preheat the Grill:

            While the steak is marinating, preheat your grill or grill pan on medium-high heat. If using an outdoor grill, ensure it's clean and well-prepared for even cooking.

              Skewer the Steak:

                If you’re using skewers, thread the marinated steak cubes onto the skewers, leaving a small space between each piece for even cooking.

                  Grill the Steak Bites:

                    Place the steak bites (or skewers) onto the grill. Cook for about 2-3 minutes per side for medium-rare, or adjust time according to your preferred level of doneness. Take care not to overcrowd the grill.

                      Add Garlic Butter During Grilling:

                        During the last minute of grilling, melt the remaining 2 tablespoons of butter and brush it generously over the steak bites. This adds extra flavor and richness.

                          Rest and Serve:

                            Once cooked to your liking, remove the steak bites from the grill and let them rest for a couple of minutes. Optional: squeeze fresh lemon juice over the top before serving.

                              Garnish:

                                Serve hot, garnished with extra chopped parsley, alongside your favorite dipping sauce or sides like grilled vegetables or rice.
