4 boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons fresh lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon dried thyme

8 oz feta cheese, crumbled

3 tablespoons cream cheese, softened

2 tablespoons Greek yogurt

1 tablespoon olive oil

Juice of 1/2 lemon

Fresh herbs for garnish (optional, like dill or parsley)

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for maximum flavor).

    Prepare the Whipped Feta: In a food processor, combine the crumbled feta cheese, cream cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy, scraping down the sides as necessary. Adjust seasoning with additional salt or lemon juice to taste. Transfer to a serving bowl and chill in the fridge until ready to serve.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium-high heat and lightly oil it.

        Grill the Chicken: Remove the chicken from the marinade and let any excess drip off.
