4 boneless, skinless chicken breasts

1 ripe mango, diced

1 cup fresh pineapple chunks

1/4 cup red onion, finely diced

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped

1/4 cup lime juice (about 2-3 limes)

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Lime wedges and extra cilantro for garnish

Instructions
 

Prepare the Marinade: In a mixing bowl, combine lime juice, honey, soy sauce, olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Whisk together until the honey is fully dissolved.

    Combine Fruits: In another bowl, mix the diced mango, pineapple chunks, and red onion. Set aside to marinate slightly while you prepare the chicken.

      Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it over medium-high heat on the stove.

          Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Brush some of the marinade over the chicken while grilling for added flavor.
