Grilled Peach & Burrata Salad

3 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups arugula or mixed greens

1/4 cup pistachios, roughly chopped

2 tablespoons honey

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Grill: Heat your grill to medium-high. If you're using a grill pan, place it over medium heat.

    Prepare the Peaches: Brush the halved peaches (cut-side) lightly with olive oil and sprinkle with a pinch of salt.

      Grill the Peaches: Place the peaches on the hot grill, cut-side down. Grill for about 4-5 minutes until they are caramelized and have nice grill marks. Flip them over and grill for an additional 2-3 minutes until warmed through. Remove from the grill and set aside.

        Assemble the Salad: In a large serving platter or bowl, place the arugula or mixed greens as the base. Tear the burrata into smaller pieces and scatter over the greens.

          Add Peaches and Pistachios: Slice the grilled peaches into wedges and arrange them over the burrata and greens. Sprinkle the chopped pistachios on top for a crunchy texture.

            Drizzle with Honey & Balsamic Glaze: In a small bowl, mix the honey with a bit of olive oil for easier drizzling. Pour this honey mixture and the balsamic glaze over the salad.
