1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Avocado and Corn Salsa:

1 cup sweet corn (fresh, grilled, or canned)

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeded and finely chopped (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

For Serving:

4 cups cooked quinoa or rice (white or brown)

Lime wedges, for garnish

Extra cilantro for garnish

Prepare the Marinade: In a mixing bowl, whisk together olive oil, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for at least 15 minutes.

    Make the Salsa: In a separate bowl, combine the sweet corn, avocado, red onion, tomato, jalapeño (if using), cilantro, and lime juice. Season with salt and pepper to taste. Gently mix and set aside.

      Grill the Shrimp: Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the shrimp for about 2-3 minutes per side or until they turn pink and charred. Remove from the grill.
