Grilled Shrimp Cobb Salad

For the Grilled Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon lemon zest

Salt and pepper, to taste

For the Salad:

6 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup crumbled blue cheese

4 slices cooked bacon, crumbled

2 hard-boiled eggs, quartered

For the Dressing:

¼ cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon honey

Salt and pepper, to taste

Instructions
 

Prepare the Shrimp Marinade:

    - In a bowl, combine the olive oil, minced garlic, smoked paprika, lemon zest, salt, and pepper. Mix well. Add the shrimp to the marinade and toss to coat. Cover and let marinate for about 15-20 minutes.

      Preheat the Grill:

        - Preheat your grill to medium-high heat (about 400°F / 200°C). If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.

          Grill the Shrimp:

            - Thread the marinated shrimp onto skewers for easier grilling. Grill the shrimp for about 2-3 minutes on each side or until they turn opaque and have nice grill marks. Remove from heat and set aside.

              Make the Dressing:

                - In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper. Adjust seasoning to taste.

                  Assemble the Salad:

                    - In a large serving bowl or platter, layer the mixed greens as the base. Arrange the grilled shrimp over the greens, followed by the cherry tomatoes, avocado, crumbled blue cheese, crumbled bacon, and quartered hard-boiled eggs.

                      Drizzle with Dressing:

                        - Right before serving, drizzle the dressing over the salad or serve it on the side for guests to add as desired.
