Grilled Shrimp Tacos

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

Zest and juice of 2 limes

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and black pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

½ cup fresh cilantro, chopped

½ cup diced tomatoes

Crème fraîche or sour cream, for topping (optional)

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp, olive oil, lime zest, lime juice, minced garlic, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Toss to coat the shrimp thoroughly. Cover and refrigerate for at least 30 minutes to let the flavors meld.

    Preheat the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium-high on the stovetop.

      Grill the Shrimp: Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning). Place the skewers on the grill. Grill the shrimp for 2-3 minutes on each side until they turn pink and opaque, ensuring not to overcook them. Remove from heat.

        Warm the Tortillas: While the shrimp are grilling, warm the corn tortillas on the grill for about 30 seconds per side or until they are pliable and have nice grill marks. Alternatively, you can warm them in a skillet.

          Assemble the Tacos: On each tortilla, layer a small handful of shredded red cabbage, a few shrimp, avocado slices, and diced tomatoes. Top with chopped cilantro and a dollop of crème fraîche or sour cream if desired.

            Serve: Serve the tacos immediately with lime wedges on the side for an extra burst of flavor.
