Grilled Shrimp with Pineapple Salsa

Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

1 lime, juiced

1 cup fresh pineapple, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, minced garlic, smoked paprika, chili powder, salt, pepper, and lime juice. Add the shrimp and toss until well coated. Cover and let marinate for at least 15 minutes, but up to 1 hour for more flavor.

    Prepare the Pineapple Salsa: In a separate bowl, mix together the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and a pinch of salt and pepper. Adjust the seasoning if needed. Allow the salsa to sit for at least 10 minutes to let the flavors meld.

      Preheat the Grill: Heat your grill or grill pan to medium-high heat. If using skewers, soak them in water for 30 minutes prior to grilling to prevent burning.

        Grill the Shrimp: Thread the marinated shrimp onto the skewers (if using) and grill for about 2-3 minutes on each side, or until shrimp are opaque and cooked through. Remove them from the grill.

          Serve: Place the grilled shrimp on a serving platter and top with the pineapple salsa. You can also serve it with lime wedges on the side for an extra zesty kick!
