Instructions

Prepare the Tenderloin:

    - Preheat your grill to medium-high heat (around 400°F / 200°C).

      - In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - Rub the spice mixture evenly over the beef tenderloin. Let it marinate for about 30 minutes at room temperature for enhanced flavor.

          Make the Creamy Dill Sauce:

            - In a mixing bowl, combine Greek yogurt, mayonnaise, chopped dill, lemon juice, and minced garlic.

              - Whisk until smooth and creamy.

                - Adjust the seasoning with salt and pepper. If a thinner consistency is desired, add water 1 tablespoon at a time until you reach your preferred texture.

                  - Refrigerate while grilling the meat.

                    Grill the Tenderloin:

                      - Place the marinated tenderloin on the preheated grill.

                        - Grill for about 5-6 minutes on each side for medium-rare, or until it reaches your desired internal temperature (130°F / 54°C for medium-rare).

                          - Avoid flipping too often; let it develop a nice sear and crust.

                            Rest the Meat:

                              - Once grilled to your liking, remove the tenderloin from the grill and let it rest for at least 10 minutes. This will help retain the juices in the meat.

                                Slice and Serve:

                                  - Slice the beef tenderloin into medallions.

                                    - Serve drizzled with the creamy dill sauce and garnish with fresh herbs if desired. Pair with seasonal vegetables or a fresh salad for a perfect meal.
