Grilled Vegetable Flatbread

2 large flatbreads (store-bought or homemade)

1 zucchini, sliced into thin rounds

1 bell pepper (red or yellow), sliced into strips

1 medium eggplant, cut into rounds

1 cup cherry tomatoes, halved

1 red onion, sliced into rings

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup fresh spinach leaves

1 cup mozzarella cheese, shredded

1/4 cup balsamic glaze (optional, for drizzling)

Fresh basil leaves, for garnish

Prep the Vegetables: In a large mixing bowl, combine the zucchini, bell pepper, eggplant, cherry tomatoes, and red onion. Drizzle with olive oil, and sprinkle with oregano, garlic powder, salt, and pepper. Toss until evenly coated.

    Grill the Vegetables: Preheat your grill to medium-high heat. Once hot, place the vegetable mixture onto the grill in a single layer (you can use a grill basket or aluminum foil if preferred). Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from heat and set aside.

      Grill the Flatbreads: Reduce the grill heat to low. Lay the flatbreads directly on the grates, grilling each for about 2-3 minutes on each side until they are slightly crispy and have grill marks.
