Grilled Zucchini Feta Foldovers

2 medium zucchinis, sliced lengthwise

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup crumbled feta cheese

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

1 cup whole wheat or gluten-free flatbreads or wraps

Optional: Balsamic glaze for drizzling

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C). If using a grill pan, heat it over medium heat.

    Prepare the Zucchini: In a bowl, toss the zucchini slices with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.

      Grill the Zucchini: Place the zucchini slices on the grill and cook for about 4-5 minutes on each side, or until grill marks appear and the zucchini is tender. Once done, remove from heat and let them cool slightly.

        Make the Fillings: In a mixing bowl, combine the crumbled feta, sun-dried tomatoes, and chopped basil, mixing them well to create a flavorful filling.

          Assemble the Foldovers: Lay a flatbread on a clean surface. Place a few grilled zucchini slices in the center, then add a generous amount of the feta mixture on top. Fold the flatbread in half over the filling to form a half-moon shape.

            Grill the Foldovers: Lightly brush the outside of the folded flatbreads with a little olive oil to help crisp them up. Place the foldovers on the grill for about 2-3 minutes on each side until golden and slightly charred.

              Serve: Remove from the grill and let cool for a minute. Optionally drizzle with balsamic glaze and cut in half to serve.
