Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 cup dark chocolate chips (optional)

Pinch of salt

Optional mix-ins: chopped nuts, dried fruits, or seeds

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, and vanilla extract. Mix well until smooth and creamy.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, baking powder, cinnamon, and salt until evenly mixed.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If you’re using chocolate chips and any optional mix-ins (like nuts or dried fruits), fold them in gently.

Shape the Cookies: Using a spoon or a cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are golden brown and the tops look set.

Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, your guilt-free banana oat cookies are ready to enjoy! Store any leftovers in an airtight container for up to a week.
