4 tbsp almond flour

2 tbsp cocoa powder (unsweetened)

1 tbsp coconut sugar (or sweetener of choice)

1/8 tsp baking powder

1/8 tsp salt

1/4 cup unsweetened almond milk (or milk of choice)

1 tbsp unsweetened applesauce (for moisture)

1/2 tsp vanilla extract

Optional: 1 tbsp dark chocolate chips or chopped nuts for added richness

In a microwave-safe mug (10-12 oz size), combine the almond flour, cocoa powder, coconut sugar, baking powder, and salt. Stir until well combined.

    Add the almond milk, applesauce, and vanilla extract to the dry ingredients. Mix thoroughly until you have a smooth batter. If you’re using chocolate chips or nuts, fold them in now.

      Scrape down the sides of the mug to ensure even cooking, and smooth the top of the batter.

        Microwave the mug on high for 60-90 seconds. Start with 60 seconds and check for doneness. The cake should rise and look set, but soft in the center.

          Let the mug cake cool for a minute before enjoying it directly from the mug, or transfer it to a plate if desired. Top with fresh berries, a dollop of yogurt, or a drizzle of nut butter for an extra treat.
