500g boneless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (or canned, drained)

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 small onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon cornstarch, mixed with 2 tablespoons cold water (slurry)

2 tablespoons vegetable oil (for frying)

Salt and pepper to taste

Cooked jasmine rice, for serving

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Marinade: In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, grated ginger, salt, and pepper. Add the chicken pieces and marinate for at least 30 minutes (up to 2 hours for more flavor).

    Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

      Cook the Chicken: Drain the chicken from the marinade (reserve it) and add it to the heated skillet. Sauté for about 5-7 minutes, stirring frequently, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a little more oil if needed, and stir-fry the sliced onion and diced bell peppers for about 4-5 minutes until they are tender but still crisp.

          Add Pineapple: Add the pineapple chunks to the skillet and stir for another 2 minutes, allowing the pineapple to caramelize slightly.

            Combine Ingredients: Return the cooked chicken to the skillet with the vegetables and pineapple. Pour the reserved marinade over the chicken mixture and bring to a gentle simmer.

              Thicken the Sauce: Stir in the cornstarch slurry, and cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken and vegetables beautifully.

                Serve: Remove from heat and serve the Tropical Pineapple Chicken delight over cooked jasmine rice. Garnish with fresh cilantro if desired.
