Ingredients

8 Hawaiian sweet rolls

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon sugar

2 tablespoons unsalted butter

1 cup fresh pineapple, diced (or canned, drained)

1/2 cup shredded coconut (optional)

Maple syrup, for serving

Powdered sugar, for dusting

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Custard: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until fully combined and the mixture is smooth.

Slice the Rolls: Cut each Hawaiian roll in half horizontally. This will create a pocket for the custard to soak into.

Soak the Rolls: Dip each half of the Hawaiian roll into the custard mixture, ensuring they are well soaked on both sides. Let them sit in the custard for about 2-3 minutes to absorb the flavors.

Cook the French Toast: In a large non-stick skillet or griddle, melt the butter over medium heat. Once melted and bubbly, add the soaked rolls, cut side down, in batches (if necessary) to avoid overcrowding. Cook until golden brown, about 2-3 minutes per side.

Prepare Pineapple Topping: In the same skillet, add the diced pineapple and shredded coconut (if using) for about a minute, just until warmed through and slightly caramelized. Stir occasionally to prevent sticking.

Serve: Plate the golden Hawaiian Roll French Toast and top with the warm pineapple-coconut mixture. Drizzle with maple syrup, dust with powdered sugar, and add fresh mint leaves for garnish.

Enjoy: Serve immediately while warm and enjoy the tropical twist on a classic French toast!
